I think this is pretty universal as far as pancake griddles go. An alternative would be to get a little fancier and purchase equipment, ie, an encaustic palette, from one of the main manufacturers, such as RF (see image), though I’ve had these as well and don’t consider them to be exceptionally better. I think it works best to just move the tins around on the uneven palette; I don’t know of any electrical appliance with a thermostat that give 100% even heat.
